Royal Spanakopita

In tribute to the Royal Wedding, Nikos World's chief chef has created a much improved spanakopita* recipe suitable for any royal waistline.

Toasted pine nuts, eggs, feta and cheddar cheeses, currants, salt, pepper, spinach, butter, olive oil,nutmeg and oregano wrapped in filo pastry and cooked in an oven.

Cheers Nikos, looks absolutely delicious! My CEO and I take it in turns to cook dinner and this looks like a nice surprise. I've never cooked a pastry dish before but I know we have filo sheets in the freezer. Any chance of the recipe quantities/instructions?

BTW, I'm pleased that you used your time productively in windsor ;-)

Spinach is also 'spanac' in Romanian (we don't want any Greek connections, thank you very much, as they imply that the Romanian language was formed south of the Jireček Line and not hereabouts, thereby giving us no excuse to beat up Hungarians... sorry, that was of interest to absolutely nobody on this blog).

Niko, goulash comes from the Goula mining district of what was once Hungary and what is now Turkmenistan On The Wold. The mines ran dry some time ago and so now it's generally concocted with ersatz ingredients.

Dear Nikos:

The Greeks invented the first and best fast food: Souvlaki... And Dolmates are my favorite appetizer (salad sushi).

I also love the interiors of Greek Orthodox churches. To me, a church is where you bring your spirit to be uplifted... And Greek churches look the part. I also like the outside of Russian Orthodox churches.

That's what I call food. Being a vegetarian I much prefer the Spanakopita, Royal or not, to the meatballs :-)
